Pico and guac…oh my! These two foods make life all the more worth living. Yummy in the highest!
I have a little confession about these recipes though: Big D had made them once before. But I didn’t cheat and just ride on his experience. I bought what I needed. I chopped. I mixed. I ate. Oh, I ate.
Now, I need to tell you, guacamole is my favorite food on earth. So, I already knew going into this, that I would like it. I also already knew that if I didn’t love her recipe that I could tweak it and play with it until it was something I could enjoy.
First, I made the pico. I am not a huge fan of raw onions, so I didn’t follow her exact formula for equal amounts of onion, tomato, and cilantro. I used a whole small onion, and I chopped it pretty finely. The smaller the better for me. I also used a sweet onion, which to me, is less offensive as far as onions go. And then I had a lot more tomato in my ratios. And I loved it! Then I used three avocados and added a generous portion of the pico to it. I really thought I might add some garlic, because I use it in my old stand-by recipe, but it didn’t really need it. It was yummy just the way it was.
I made a simple version of nachos for dinner (pictured above). Just tortilla chips, melted cheese, taco-seasoned ground beef, pico, guac, and sour cream. It was soooooooo good. We’ve had it one other time since then, with chicken instead of the beef. Just as good.
Trust me….if you like this type of food, you will like these recipes. Go ahead and try them. You know you want to.

For our next assignment, we’re back to the breakfast section. Alright…let’s get it over with. Let’s try the Cinnamon Rolls, pp. 36-39. I’ve been both dreading and looking forward to this recipe. Dreading because they look difficult and time-consuming and messy. Anticipating because I want one.

You are a woman of excellent taste! LOL! I am not fond of onions but I love guacamole! I’ve been wanting to try PW’s version but if you could just make extra and let me eat it, that would work out so much better for me. ;o)

I’ve been making PW’s pico and guac for a couple of years! LOVE it! I made it this time, but didn’t take pictures. We used them for toppings for chicken empanadas (Rachael Ray recipe). Oh, so good!

We has psyched ourselves for a great dinner including pico and guacamole for Saturday. I made my list for the store and we trekked to our “local” Ingles. (Local is so relative here!!!) Anyway, I went right to the avacados to pick a few good ones and could not believe that the entire bin was filled with hard-as-rock avacados. I can’t begin to describe how bummed we were. As there is no other place that sells groceries in that little town, we had nowhere else to go. We certainly weren’t going to trek another 20 minutes further down the road to the next grocery store… well, David and I would have, but not with all three gals!! As it were, we settled for gross frozen pizza for dinner and I can only post my wonderful memories of this recipe!!
We’ve served it, in the past, with PW’s quesadillas. Soooooo good!! I think I’ll be making some this weekend as we have a friend visiting and that makes a great dish for company!!
The cinnamon rolls. I’ve made them before and was not a huge fan. The topping was WAY too much. She drowns hers in goo. That is not my preferred way to do cinnamon rolls. I love making homemade cinnamon rolls, though, and will take one for the team by making my recipe.

Her recipe for pico and mine are the same already so I knew it was good! The quac on the other hand was different. I don’t care for the cilantro in the quac and like you I usually add a little garlic to it.
The cinnamon rolls… let me say I have made them and they are heavenly! A good tip to know that they freeze well and it is super easy to pull a pan out of the freezer on a busy morning and heat them up. Making them is messy and somewhat time consuming, but well worth the effort I promise!

And, Susan, I’ve tasted one of PW’s rolls before, as a friend from church made and brought them with her once. I thought they were a little heavy on the goo too. I might mess with it a little or not. I was thinking of making them for a 10 year-old b’day party for H. I don’t know if boys that age can have too much goo.
You can always go easy on the icing. I actually like them with all the icing but I can see why some wouldn’t. Just make sure you use the coffee as called for in the recipe. I made them two Christmases ago with and then this past Christmas without and could tell a huge difference in the flavor factor.
They are time consuming and messy to make though. That’s why they are a Christmas morning tradition for us! They are delicious!!
